It’s the most wonderful time of the year!!! Yes, it is Christmas and who doesn’t love Christmas. I know I do. I love this time of the year. It is basically the time of the year I feel no guilt or shame about stuffing my face with delicious treats. I mean the goodness is everywhere from cakes, sweets, chocolates and pastries – the list is positively endless. I find myself saying the expression “don’t mind if I do Lilian” more and more now that there are so many parties and functions to attend, each with their own delights and yummy goodness.  My tummy was never ready but is fully up for the challenge. Like I said, Don’t mind if I do.

Funny story about this recipe I am about to share. About 2 Saturdays ago, my lovely boyfriend came over to my house with a packet of easy bake Red Velvet cake mix. He was all game for making this cake from a box however I persuaded him not to and save it for my birthday which was the following Saturday (17 December)

With no surprise, my mom found the box and proceeded to make delicious cupcakes with this mix instead. She is pretty awesome.

I took it upon myself to have a bit of fun with the lovely cupcakes and cream cheese frosting. I love letting my creative flag fly. So I gathered up some amazing ZANG Chocolate and the awesome cupcakes made by my mom and went deco crazy on them cupcakes. These lovely red velvet cupcakes are so easy to make and here is the recipe below. This is a fun treat for the whole family to get involved in.

Ingredients: 

Cup Cake Mix 

2 ½ Cups Flour

½ Cocoa Powder

1 Baking soda

½ Teaspoon salt

1 cup butter

2 cups sugar

4 eggs

1 cup sour cream

½ cup milk

1 ounce Red Food Colour

2 teaspoons vanilla essence

Cream Cheese Frosting 

8-ounce cream cheese

¼ cup butter

2 teaspoons vanilla essence

16-ounce icing sugar

Directions: 

  1. Preheat oven to 350 degrees. Mix flour, cocoa powder, baking soda and salt in medium bowl. Set aside.
  2. Beat butter and sugar until light and fluffy. Beat in eggs, one at a time. Mix milk, food color, and vanilla. Spoon batter into 30 paper-lined muffin cups, filling each cup 2/3 full.
  3. Bake 20 minutes or until a toothpick inserted into a cupcake comes out clean. Cool in pans on a wire rack 5 minutes. Remove from pans; cool completely. Frost with Vanilla Cream Cheese Frosting.
  4. Vanilla Cream Cheese Frosting: Beat cream cheese, softened, butter and Vanilla Essence in large bowl until light and fluffy. Beat in icing sugar until smooth.

Decorating: 

Now that you have lovely frosted cupcakes grab a grater and some ZANG Chocolate and cover the top of your frosted cupcakes or simply place a block of ZANG on the top.
